Looking for a change of pace for your burgers this holiday weekend? Try this recipe for black bean & vege burgers. There's some prep time involved, but they're worth it. We thought they were fantastic! Next time, I'll make a double batch and freeze half. Enjoy! (This recipe comes from the American Institute for Cancer Research.)

Black Bean Burgers | |
Ingredients: | |
Instructions: | |
1. Heavily coat medium skillet with cooking oil spray. Heat over medium-high heat until hot. Add scallions, red pepper and garlic. Reduce heat to medium-low and sauté until very soft, about 5 minutes. Do not let vegetables brown.
2. Remove vegetables from heat and mix in beans and rice. Transfer to food processor or blender and process until mixture is coarsely chopped. Be careful not to over-process.
3. Transfer mixture to medium bowl. Season to taste with hot pepper sauce, cumin, salt and pepper. Add egg white and mix in lightly with fork until just blended. Mix in breadcrumbs with fork until lightly blended. Form mixture into eight patties. (Patties will hold their shape better if refrigerated, covered, at least 30 minutes.)
4. When ready to sauté patties, lightly coat skillet with cooking oil spray and heat over medium-high heat until hot. Add patties and sauté on both sides until nicely browned about 4 minutes per side.
5. Serve plain or with lettuce and tomato on whole grain buns. |
You, my friend, are a mind reader. I have been making and freezing food at rapid speeds lately and I was just looking for something like this to freeze for little Eli. I WILL DO IT! Thanks much.
